At OR Coffee Roasters, we believe that understanding your coffee’s story deepens your appreciation for every cup. Los Tres Potros comes from the farm of Don Carlos and Hedardo Méndez, located in the Ahuachapán region of western El Salvador, between the towns of Apaneca and Ataco, at an altitude between 1,300 and 1,450 MASL.

They cultivate their Pacamara variety strictly under the shade of native trees, while sustainably managing water resources through rainwater collection. Their family’s finca specializes in producing high-quality coffee, and during the harvest season, they employ around 20 people to handle the processing with care and precision.

Ahuachapán, situated along El Salvador’s western volcanic corridor, is one of the country’s most renowned coffee-producing regions. With its high elevation, fertile volcanic soil, and cool climate, it offers ideal conditions for growing complex and flavorful coffees like Pacamara — a hybrid variety known for its large bean size and unique cup profiles.

Producers in this region, like Don Carlos and Hedardo Méndez, often combine traditional knowledge with sustainable practices, resulting in consistently exceptional coffees that reflect the character of the land and community.

Los Tres Potros is made up of Pacamara beans — a variety known for its exceptionally large size and lower density. This unique structure calls for a gentle roasting approach. To preserve the coffee’s natural sweetness and avoid burning the sugars, we roast at a lower temperature. The total roast time remains between 7 and 9 minutes, resulting in a clean and vibrant light roast, ideal for filter brewing.

Los Tres Potros is perfect for filter brewing methods like the V60, Chemex, or batch brewer. These methods emphasize the coffee’s red apple and currant notes, the creamy hazelnut body, and its zesty orange finish.

To enjoy the full complexity, we recommend using a slightly lower brew temperature (around 92–94°C) to bring out the citric acidity and floral undertones. Whether you’re sipping slowly or sharing with friends, this coffee offers a dynamic and satisfying cup that evolves as it cools.
