Colombia El Credo is an outstanding coffee from Medina Espejo village in Narino. Carefully cultivated at high altitudes. This coffee Coffee was collected in a selective manner, meaning only ripped cherries were
picked, then selected by density, and then processed using a semi-washed
method, which combines the washed and unwashed processes. The outer skin is
removed, similar to washed coffee, but the mucilage—inner mesocarp—remains
on the parchment. The coffee was placed on air-flow canopy beds and dried for 18
– 24 days. This processing method increases the coffee’s body and intensity yielding a unique cup profile with notes of green apple, orange, blueberry, sugarcane.

The department of Nariño is Colombia's southwestern-most coffee-growing state, bordering Ecuador and the Pacific Ocean. It is home to thousands of smallholder coffee-producing families and indigenous groups. Nariño's closeness to the equator delivers intense exposure to the sun year-long, influencing the cherry maturation rate. Colombia's three ranges of Andean mountains converge in Nariño, presenting ideal altitudes and fertile soil for high-grown arabica production. Warm air rises from the deep canyons at night and acts like a protective blanket for the coffee plants perched at high elevations on the mountain tops, up to 2.500 m.a.s.l. These combined attributes cause coffee plants to absorb the sun's energy day and night passively. That translates into full flowering, long cherry maturation periods, smaller high-density seed sizes, and intense flavours.
Nariño's particular geography and proximity to coastal and land borders have historically transformed it into a corridor for illicit trade routes, resulting in unwarranted violence against residents of remote mountain farms. Today, thanks to the remarkably resilient and fearless spirit of Nariño's farmers, the small region is a respected nucleus of coffee innovation.
