This coffee comes from 𝐅𝐞𝐫𝐧𝐚𝐧𝐝𝐨 𝐂𝐨𝐫𝐝𝐞𝐫𝐨 and was processed by our dear friend 𝐋𝐮𝐢𝐬 𝐂𝐚𝐦𝐩𝐨𝐬. He was the first man to try the 𝐀𝐧𝐚𝐞𝐫𝐨𝐛𝐢𝐜 process, and is still experimenting with new fermentation processes everyday. He is the owner of a dry and wet mill where multiple producers bring their coffees to be processed. He has his own coffee plantation but that one is only around 1400m. That is why he decided to work with smallholders that have plantations around 1800m and give them an opportunity to earn more money with their coffee.

How it's roasted

The anaerobic fermentation during the processing of the coffee usually affects the moecular structure of the seeds. This means to develope a structured cup, we need to apply heat gently and control the gas setting with scrutiny.
